Chef Sandoval – famous for his contemporary interpretations of Latin cuisine - was inspired by the Vail Valley’s active lifestyle when crafting menus for Cima. Infused with Sandoval’s vibrant Latin flavors, the lunch, dinner and Latin brunch offerings are replete with fresh market produce, sustainable seafood, locally raised meats and specialty products from local purveyors.
With selections of Tequila, Pisco, Cachaca and other regional liquors, Cima’s bar is a showcase for Latin spirits. Guests may sip their selections or choose from fresh, hand muddled cocktails. Happy Hour is offered daily in the bar for guests coming in off the slopes or up from the spa. Enjoy a bottle of wine or a signature cocktail in Cima's Redondo, a cozy nook adjacent to the energetic bar with a fire pit table and circular view.
